{Ebert BBQ Beef Brisket}
50 10 lbs Beef Brisket or Pork steak
5 lbs salt and pepper
1/4 cup chili powder
1/4 cup celery salt
1/4 cup garlic
COOK BRISKET ON EBERT PIT FOR ABOUT
15 TO 20 HOURS
Pork steak for 3 to 4 hours
{Ebert Pickled Tongue}
1 tongue 4-5 LBS(cow tongue)
2 onions sliced
1 1/2 tsp pepper
1 1/2 tsp salt
Boil in water til tender
Cool
Peel outside off
Slice tongue 1/8 thick
Slice onion
Layer in large bowl,tongue and onion
Then add 1 cup Vinegar 90 grain
Fill with water to cover tongue and onion
salt and pepper
Put in Fridge at least over night.
Daddy always made this in the big yellow pyrex bowl.
{Turkey Breast}
24 2 LB each Breast
2 quarts mayonnaise on lightly
3 oz cayenne pepper
4 to 6 oz garlic salt
4 oz fine pepper
4 oz course pepper
Smoke for about 3 to 4 hours until
150 degrees in center of breast
{Pork Tenerloin Bake}
2 2 lbs pork loin
1 teaspoon onion grated
1 clove garlic crushed
1 tablespoon wine vinegar
6-8 slices bacon
1/4 teaspoon cayenne pepper
1/2 teaspoon sugar
1/2 cup soy sauce
wrap tenderloins in bacon, marinate two hours or longer
Bake uncovered at 300 degrees for 2 hours
{Ebert Homemade Chili}
10 lbs Beef
1 lb Pork
1 TBS salt
1 oz Black pepper
3 cups onion
1/4 cup bell pepper
1/4 cup celery
3 to 4 TBS chili powder
1 TBS allspice (put in container)
2 TBS cornstarch
Cook for about 5 hours
{Ebert Homemade Sausage}
100 lb beef & pork
1 lb salt
8 to 10 oz black pepper
4 oz curing salt
4 to 6 oz garlic
Add for
HOT Sausage
6 oz chili powder
3 to 4 TBS Jalapeno cut up
3 oz red pepper
{Ebert Summer Sausage}
5 lb Lean Beef
4 TSP Black Pepper
2 TSP Garlic Powder
3 1/2 TSP Mustard Seed
2 TSP Liquid Smoke
3 pinch's Curing Salt
Work for 3 Day Mix 2 or 3 times
Oven 325 Degrees for 2 Hours
{Sam's Sausage}
100 lb Pork& Beef
1 1/2 lb Salt
2 oz curing salt & salt petre
10 oz garlic
1 oz dry mustard
1 oz pappika
Red pepper to Taste
{Ebert Picnic Stew}
100 lbs beef cut into 1 inch cubes
10 onion cut up
4 celery cut up
6 green pepper cut up
3 oz allspice (in container)
1/2 lb salt
3 oz black pepper
2 oz chili pepper
1/4 TBS paprika
1/4 cup mustard
2 oz garlic
1/4 stick butter
1 52 oz tomato soup IF you LIKE
{Ebert Frozen Cabbage Slaw}
10 heads cabbage
5 tsp salt
5 bell peppers
5 carrots
5 cups vinegar
2 1/2 cups water
10 cups sugar
5 tsp dill weed
1 TBS mustard
5 cups vinegar and 2 1/2 cups water 10 cups sugar
and 1 TBS mustard and 5 tsp dillweed
Heat until sugar is melted remove from heat and cool
Then Mix all ingredients
{Ebert Fruit Salad}
5 cups sugar
10 egg yolks
10 TBS lemon juice
3 can pineapple juice
5 TBS cornstarch
COOK
6 kiwi cubed
10 oranges sectioned
10 apples cubed
10 bananas sliced
5 lbs red grapes halves
5 lbs green grapes halves
Cook sugar,egg yolks,lemon juice,cornstarch
and pineapple juice
Cook until thick and set aside to cool
Add fruits
you can also add whipped cream to sauce
KEEP CHILLED
{Ebert Shrimp Creole}
3 lbs shrimp (RAW)
1 tsp Fat (rounded)
1 tsp flour (rounded)
2 large onion chopped
2 celery chopped
2 cloves garlic chopped
1 8oz tomato sauce
2 bay leaves
salt and pepper
Brown Flour
add tomato sauce and bay leaf
sauti onion and celery and garlic
Add to Rouix, simmerr for 20 minute
add raw shrimp and cook until shrimp is done
