Carmen Pecan Cheesecake
1) Mix 1 cup graham cracker crumbs, 3tbsp sugar, 3tbsp melted butter and press firmly into 9in spring pan. Bake at 325 for 10 min.
2) Beat 5 8oz packages of cream cheese, 1 cup sugar, 3tbsp flour, and 1 tbsp vanilla blend well. Add 1 cup sour cream, 4 eggs one at a time and mix on low speed until well blended. Pour over crust.
3) Bake 325 for 1 hour or until center is almost set. Cool before removing rim of pan. Refrigerate overnight.
4) Place 12 caramels and 1tbsp water in bowl and Microwave on high until melted.
5) Place desired amount of pecan halves on top of the cheesecake and drizzle caramel over the top.
