Name of Chef : Hilton Little
Chef to the President of the Republic of South Africa.
I guess I’ve always wanted to be a chef, from the age of 9 years. While my brothers and sister were playing children’s games outside, I was helping my mom in the kitchen.
At age 9 I baked my first cake, it was not perfect, but it was the start, and it trigged of a passion that I hold to this day. I love the smell of baked bread I would walk into the bakery section at the local supermarket just to get my daily dose of freshly baked bread.
After completing my schooling, and a six months cooking course, I started employment at a three star hotel. This was unlike the kitchen at home, white wall tiles, long stainless steel tables covered most of the main kitchen, there were chefs calling out orders, waiters rushing in and out of kitchen to restaurant, there were so much activity, I froze, I wanted to run out of there and give up the idea of being a chef.
But hard work, dedication and goals set, saw me through, I had a passion for food and I wanted to learn everything.
Many years of working in top hotels in Cape Town and abroad, representing South Africa in international competitions, I decided to move on, and it just so happened that a household manager/ chef was required for the official residence of the former President Nelson Mandela. After months of interviews and with the last interview with Mr. Mandela I joined the Office of the President, an honour and a privilege to be working for the President Mr. Mandela and President Mbeki.
I believe that if you have dreams, reach for them, if you set goals for yourself achieve them, if you fail, never lose the lesson, pick yourself up, dust yourself off and start again. But never give up. Make everyday a memorable one, and that’s my believe.
