Chicken Fricassee With Dumplings
3 lbs Boneless Chicken 1/3 cup flour
1 1/2 teaspoons salt 1 teaspoon marjoram leaves
1/4 cup butter or mar. 2 medium onions, sliced
1 cup chopped celery 6 large carrots, pared and halved
1 bay leaf 4 hole cloves
9 whole black peppers 1 small can chicken broth
Wash chicken , dry on paper towels. In plastic bag mix flour with salt,
marjoram; mix well. Cover chicken with flour mixture, and reserve about 2 tablespoons of flour mixture for gravy. In 2 tablespoons of hot butter or mar. in 6 qt. Dutch oven, sauté chicken pieces until light brown about 15 min. Take out; set aside. Brown all chicken adding butter as needed. To drippings add onion, celery, carrots, bay leaves, cloves and black pepper. Sauté stirring 5 min. Stir in chicken broth and 1 cup water; bring to a boiling. Return chicken to Dutch oven. Bring to boiling; reduce heat, simmer covered 40 min.
DUMPLINGS: 1 1/2 cups biscuit mix, chopped parsley or snipped chives, 1egg, 1/4 cup milk; Mix in med. Bowl. Drop batter by 6 round tablespoons on to chicken in pot. Cook 15 min. uncovered and 15 min. covered. Lift off when done. Add 1/2 cup cream or canned milk to 2 tablespoons of flour mixture mix well. Add to thicken. Serve hot. Makes 6 servings

1/2 c Granulated sugar
2 tb Brandy or almond extract
1 1/3 c Extra strong coffee
1 lb Mascarpone or ricotta cheese
1 1/2 c Whipping Cream
24 Giant Italian Ladyfingers
4 oz Semisweet Chocolate chopped
Instructions
In bowl, beat egg yolks with sugar till light about 5 minutes. Whisk in 1/2 cup coffee and 1 tbsp brandy or almond extract. Transfer to double boiler, over gently simmering water, whisk for about 7 minutes, till thickened. Let cool. Beat cheese till smooth, fold into egg mixture. Whip cream, stir 1/4 into egg mixture. Fold in remaining cream. Combine remaining strong coffee and 1 Tbsp brandy or almond extract. Arrange 1/2 of ladyfingers in 11X7" glass baking dish, brush with half of coffee mixture. Spread with half of cream mixture. Repeat layers. Top with chocolate. Cover and refrigerate overnight. Can be frozen for up to 2 weeks, let defrost in fridge for 24 hours.

It's entirely possible, although theirs would have been cooked much longer to drive off all the moisture, allowing them to keep for an entire ocean crossing. Though these biscotti are made with an enriched bread dough instead of the traditional cookie dough and have a somewhat softer texture, they keep well when stored in an airtight container."
Make the sponge: In the bowl of an electric mixer proof the yeast in the water for 5 minutes, or until the mixture is foamy. Whisk in the flour and let the sponge stand, covered with plastic wrap, for 30 minutes or until it is foamy. To the sponge, add the sugar, the water and the butter and stir the mixture until it is combined well. Add the flour, the aniseed, and the salt and with the electric mixer fitted with the dough hook knead the dough for 3 minutes, or until it is smooth but still sticky. Transfer the dough to a lightly oiled bowl, turning it to coat it with the oil, and let it rise, covered tightly with plastic wrap, for 1 1/2 hours, or until it is double in bulk. Turn the dough out onto a lightly floured surface, halve it, and with floured hands form each piece of dough into a flattish log 15 inches long and 2 inches wide. Transfer the logs to a buttered and floured baking sheet and let them rise, covered with a kitchen towel, for 2 hours, or until they are double in bulk. Bake the logs in the middle of a preheated
