BREADS
BEAN BREAD
1 cup raisins
1 cup boiling water
1 cup sugar
3 eggs, beaten
3/4 cups oil
1 tsp vanilla
1 15-oz can Pork & Beans
1 tsp cinnamon
1/2 tsp baking powder
1 tsp baking soda
1 cup chopped nuts
Add raisins to boiling water and set aside. Mash beans with a fork in a large bowl until smooth. Add sugar, eggs, oil and vanilla. Mix well. Sift together dry ingredients and fold in. Drain raisins and fold in with chopped nuts. Spoon batter into three greased and floured loafed pans. Bake in a 325-degree oven for 50 to 60 minutes, or until a knife inserted comes out clean.
QUICK & EASY YEAST ROLLS
1 pkg active dry yeast
3/4 cups water
2 tbsp Sugar
2 tbsp oil
1/2 tsp Salt
1 egg
2 cups Flour
stick of soft butter
Dissolve yeast in luke warm water in 2 1/2 quart bowl. Add Sugar, oil, salt, & egg. Stir to dissolve sugar & salt. Stir in 1 cup of the flour until smooth. Cover with a clean cloth& place on rack over a pan of hot water. Let rise 15 minutes. Stir down batter & add 1 1/2 cups flour. Stir until mixed. Knead 3 minutes & let rise 25 minutes. Heat oven at 425 degrees & bake 12 to 15 minutes. When done, lightly brush tops with soft butter
BREAD STUFFING
Mix together in a large bowl--
2 quarts bread cubes
1 cube butter, melted
2 eggs, beaten
1 large Onion, cubed
1 cup celery, diced
Pimento or red sweet pepper, diced
1 cup mushrooms, cut up
1 tsp Sage, Garlic Powder, Pepper
2 cups Broth or Bullion (more as needed to moisten bread)
Cover and bake in greased pan at 350 degrees for 30 minutes.
WHOLE WHEAT BREAD
6 Cups warm water
1 Cup honey(0r half molasses)
2 Tbs. yeast
Place in a large bowl. Let set 5 minutes.
2 eggs, beaten
1/2 cup oil
2 1/2 Tbs. salt
Add to yeast mixture.
3/4 Cup dry milk, non-instant (or 2 Cups instant dry milk)
8 Cups whole-wheat flour
Mix together. Add to first mixture. Beat with electric mixer to develope gluten.
About 6 Cups more whole-wheat flour----Add until dough is thick, stiring in with a wooden spoon. Knead dough with remainder of flour until elastic and not sticky. Do not add any more flour than necessary to achieve this elastic ball.
Let rise in an oiled bowl, coverd, in a warm place until double, one time. Place in greased pans. Let rise to the top of the pan. Bake at 350* degrees for 50 minutes. Makes 4 large loaves with enough for rolls or scones left over.
LITTLE BREAD
2 tsp. sugar
1 cup water
1 tsp. oil
3 cups flour
Mix in a big bowl. (May color if desired.)
Mix water, sugar, & flour together. Add oil. Make smooth dough. Take a small ball and roll it out into long strips. Cut into small shapes. Fry in a pan with oil until brown.
INDIAN RICE PUDDING
4 Cups Water
2 cups Rice
1 cup Raisins
1 Tsp. Vanilla
1 Tsp. Cinnamon
1 cup Evaporated Milk
3/4 Cups Condensed Milk
Boil water and add Rice. Cook over low heat until cooked. Drain excess water if any. Add Raisins, Vanilla, and Cinnamon. Add Evaporated milk and Condensed Milk. Simmer until you get a firm texture, not runny. Mix every few minutes until done. Other fruit such as Apples may be used instead of Raisins. Top with bananas and eat.
