I’m your friendly Nutritionist!
My name is Valerie Brassell, and I am a dietitian.
I have worked at the Arkansas Department of Health for 22 years.
(Now it is officially called The Department of Health and Human Services.)
I moved to Hot Springs from Iowa in 1983.
I will be providing articles and information about food and nutrients for this newsletter.

We hear a lot about drinking water! So here are some facts:


WATER CAN HELP YOU FEEL BETTER!

Water Helps Constipation
When you don't drink enough liquids, your body takes the fluid from your colon…… That causes constipation.


Water Can Help Burn Fat
If your kidneys don't get enough water, they don't work as well.
The liver has to do the work of the kidney, so it can't burn fat as well.


Water Helps Swelling and Fluid Retention
If you don't get enough water, your body holds onto every drop.
It is stored between cells. Diuretics force some of it out, but your body holds more. Water helps flush out the stored fluid.


Water Helps Muscle Tone
Cells shrink when you lose weight. Water helps plump them up, and look healthy.

Overweight people need more fluids
Larger folks have more body area.
A larger body works harder and need more water.
For every 25 pounds overweight you are, you will need one more glass of water a day.

HOW MUCH DO YOU NEED?
There is new research that says we don’t need EXACTLY eight, 8-ounce glasses of fluid a day.
There are many factors that can increase or decrease your need for water. You CAN take in too much.
As with everything, moderation is the key.
To tell if you have enough, your urine should be the color of pale lemonade.
If it is darker, you need more fluids.
Other liquids can count as your water requirement. (Watch your calories.)
Try lower calorie juice, milk, Kool-Aid, soups, etc.
Soon you will thirst for more!

Here are a few interesting recipes to start you off!

Fast and Fun Foods made with Tortillas


Breakfast Burritos

Scramble eggs.
Add any combination of
onions, cheese, cooked sausage, hamburger meat,
or anything you think of.
Roll 1 to 2 Tablespoons of filling in a tortilla.


Tortilla Finger Food

Mix low fat or fat free cream cheese with any of these combinations;
thin sliced ham, spices or green onions.
Spread on tortillas.
Refrigerate and slice into rounds.


Tortilla Sandwiches

Use tortillas in place of bread to make sandwiches.
Try leftover meat, cheese, tuna, peanut butter or anything you would put in a sandwich.
Roll up the tortilla and eat.
Some people like to put a carrot or lettuce in the middle.

DELICIOUS NUTS

Turn on the oven to 325 Degrees.
Put aluminum foil on a baking pan and spread it with butter.
Stir an egg white in a medium bowl until it looks frothy. (White around the edges.)
Add 2 cups of raw nuts. (I use the ones on a Styrofoam plate at Wal-Mart.)
Spread the nuts on the cookie sheet to one layer.
Sprinkle with salt.
(You can use onion salt, garlic salt, Parmesan Cheese, or any other spices you want.)
Bake for 10 minutes and turn the nuts over.
Bake them for 10 more minutes.
Check them and cook for 10 more minutes if they are still raw.
I turn the oven off and leave them in the oven until they are cool.
